- 200grams Sweet Potatoes
- 200grams Flour
- 3 Egg Yolk
- Nutmeg
- Baking powder
- Tin of Peak Evaporated Milk
- 1 teaspoon of Vegetable oil.
1. Wash sweet potatoes cut into pieces and boil. Blend and add some peak evaporated milk to loosen the mixture if necessary
2. Mix flour, egg yolks, blended sweet potatoes, nutmeg and baking powder, remaining tin of peak evaporated milk and 1 teaspoon of vegetable oil
3. In a separate bowl whisk the egg whites till they form soft peaks, and then fold the egg whites into the pancake batter with a spatula, this will make the batter very light and make for nice and light pancakes
4. Fry your pancakes with either margarine or butter and serve with beef kebabs
